Préférences des consommateurs de pêches et de nectarines

Abstract : To ensure that the varieties of peaches nectarines sold on the market and the new varieties with a crisp texture meet the expectations of consumers, it is necessary to study their preferences. Fifteen varieties of peaches and nectarines with various organoleptic characteristics are chosen for descriptive and hedonic testing. First, the products are described using eleven descriptors by a panel of trained judges in Bellegarde (Ctifl). The products are then tasted by naive consumers in Avignon to identify their preferences. The results show that consumers are looking for sugary, aromatic and juicy products. Fruit with less sugar, less aroma and less juice can also be appreciated by consumers if they are rather firm and crisp. Mealy textures are not liked. The new crunchy varieties were rather appreciated by the panel. However, acidity and crisp turn out to be cleaving factors in the assessment of consumers. A segmentation of the panel into three groups with different preferences, in particular according to these criterias, was observed.
