Harmonisation et amélioration des pratiques de traitement statistique des données sensorielles

Abstract : Nestlé sensory practices have been evolving along the years. This is not the case for the statistical software Sagesse which has been developed a few years ago by Nestlé. A loss of time and efficiency has been raised by the sensory analysts. This is a real concern since the process of sensory data is almost done every day. In this context, my mission was to develop a new computer tool able to perform statistical analyses on sensory data.
An inventory of the current practices has been done. It has led to the highlighting of the main limitations: the consideration of missing data, which currently prevent from running correctly several analyses, the number of software used (because of several limitations, the analysts cannot use only Sagesse) and the presentation of the results which is the step that leads to the biggest loss of time.
Solutions have been found to handle missing data into the statistical process of sensory data. These solutions have been implemented into the new computer tool. This one is an Excel-based macro. It is easy to use and has a user-friendly graphical interface. Statistical analyses are performed in background by the software R thanks to the add-in RExcel. This way, the analysts can use only one tool to process the data.
