Résumé

In response to the growing number of farmers’ stores in France, a new Casdar’s project was born. The aim of this project, called MagPro, is to study the key to success of these farmers’ stores and their territorial impacts.This report is a case study on a farm which chose to supply its farmers’ store in vegetable by itself. The study focused on the organisation of this farm starting this new market and on the adaptation it had and has to make to combine its current activities and selling systems. The study focused on the optimization of the vegetable production and selling system performance, including profitability and resources efficacy and efficiency, as well as labour, through a detailed analysis of marketing and productions systems, and the design of performance indicators. The analysis of this case study highlights two solutions to the lack of time, underlined by labour resource tensions: (1) Hiring additional workers to balance the holding managers’ work overload. (2) To enhance global efficiency by determining the optimal products’ range and marketing systems. The approach established, including tools to collect necessary data to profitability and process study, should enable, over time, to form an optimal product range and marketing system, in agreement with the farmers’ objectives.
Face à l’émergence croissante de magasins de producteur en France, un projet Casdar a vu le jour dans le but d’étudier les clés de leur réussite et leurs impacts territoriaux, le projet MagPro. Ce mémoire porte sur l’étude de cas d’une exploitation maraîchère, en production diversifiée, qui a fait le choix d’approvisionner seule un magasin de producteur. Il s’agit d’étudier son organisation face à son entrée dans un point de vente collectif, et sur les adaptations permettant de coordonner les différentes activités et circuits de commercialisation existant. L’étude s’est portée sur l’optimisation de la performance de l’activité maraîchage, incluant la rentabilité mais également l’efficacité et l’efficience de l’utilisation des ressources, notamment de main d’œuvre, à travers l’analyse détaillée des systèmes de commercialisation et de production, et la construction d’indicateurs de performance. Deux solutions répondant au manque de temps observé, ont pu être mises en avant : (1) Utiliser un renfort de main d’œuvre, soit embaucher du personnel à qui déléguer les tâches qui surcharge les responsables d’exploitation. (2) Améliorer l’efficacité générale par la détermination d’une gamme de produit et d’une combinaison de circuits de commercialisation optimales. Les démarches mises en place, ainsi que les outils nécessaires à la récolte de données pour l’étude de la rentabilité et des processus, doivent permettre, à terme, de prendre des décisions stratégiques optimales répondant aux objectifs fixés.
