Disponibilité des outils de transformation pour relocaliser l’approvisionnement alimentaire du bassin rennais en lien avec la protection des ressources en eau potable

Abstract : The food processing act plays a vital role in providing edible, nutritionally healthy and easily storable food. As part of a food production and consumption relocation project around the Rennes basin carried by the water union Eau du Bassin Rennais, this study aims at better understanding food processing companies and their potential adaptation to the project, based on an analysis of supply and demand, a mapping of the processors and semi-direct interviews with them. The results show an imbalance between food demand and the available supply and processors. The supply appears to be a major factor limiting their involvement in the project as well as their perception of the project's economic benefits. A few points are then raised, among them the possible needs in processing tools development and the necessary involvement of logistics operators.
