Valorisation de la qualité : cas de la filière avicole en région Centre-Val de Loire

Abstract : The project VOLAILLES (Valorization of Origin, Links between actors, Local Identities, Evolution of Poultry Sector) aims to develop a sustainable poultry industry in Centre-Val de Loire region. It is then crucial to know what does the notion of quality means for the SVO (Union of Orleanais' Farm Poultries) breeders, since they are the main actors in this industry. The demand in traditional and local products from French consumers is always increasing. As a consequence, the patrimony, the tradition and the territorial anchorage are given to justify the quality of a product. Actually, for the SVO breeders, the notion of quality mostly represents technical means and time investment. This work presents as well the means used to valorize the products from this quality firm, that is to say the chicken ready to cook. Thanks to social networks for farmers selling their products on their own or the presence on the markets, the relationship based on trust between a consumer and a farmer is a key element for the success of the industry.
