Le soja et ses phyto-estrogènes : les impacts sur différentes phases de notre vie

Abstract : Soy is a legume that has been domesticated for centuries by the human civilization. It is an integral part of the Asian diet and has, for several years now, been adopted by the Westerners, who included it to their own diet. In addition to being nutritionally interesting, soy contains isoflavones; they are called phytoestrogens because of their similarities with estradiol. Bioactive phytoestrogens are ingested through food or dietary supplements and can affect our health. But what about them ? Many studies have already been carried out on this subject, showing that phytoestrogens might have an impact on the development of children’s reproductive system, on breast cancer and menopause in women. These impacts can be beneficial or deleterious, and the effects depend on various factors. This thesis analyzes a set of studies in order to establish a clear picture of current knowledge on these impacts. The final objective is to identify nutritional advice to be given in pharmacies – diet or food supplements – according to the patient’s profile.
