L’approvisionnement alimentaire des agglomérations : organisations logistiques mises en œuvre par les activités économiques et pratiques associées aux achats découplés des ménages

Abstract : In a context marked by the fight against polluting emissions and the development of local short food supply, this work aims to better understand the different logistics organizations and deferred purchases from households implemented to supply urban areas with food goods in order to identify, in a prospective simulation approach, the levers on which it is possible to act to anticipate future changes in the food system and ensure their compatibility with national environmental and food objectives. The food goods movements and food freight journeys described in the Urban Goods Movement Survey (UGMS) of the Bordeaux metropolitan area (2013) and the deferred household purchases in the Deferred Purchase Reception (DPR) survey of the Lyon metropolitan area (2017-2018) were then statistically processed, resulting in a typology. There is a wide variety of practices, with varying degrees of environmental effectiveness.
