Influence de la teneur en mercure et sélénium de l’aliment sur la régulation des fonctions anti-oxydantes, des processus d’inflammation et de détoxication chez la truite arc-en-ciel (Oncorhynchus mykiss)

Abstract : Due to the sharp drop in production from industrial fishing, significant efforts have been realized in the formulation of aquaculture feeds to replace fish oils and meals, and the use of tuna byproducts appears to be an interesting alternative. However, tuna is known to accumulate large amounts of toxic heavy metals, such as mercury. Its antagonist, selenium, can detoxify this contaminant through various interactions. The present study assessed the feasibility of using tuna byproducts as a replacement for fish oils and meals, by analyzing the interaction between selenium and mercury on the growth and metabolism of rainbow trout juveniles. A 6-month feeding trial was carried out using diets based on tuna byproducts or plant ingredients, supplemented with selenium and mercury. Our results showed that organic selenium was more beneficial, allowing better growth and strengthening the antioxidant system. Mercury supplementation produced toxicity and selenium intake allows to reduce it. The results of diets based on tuna byproducts have shown that large amounts of selenium can become just as toxic as mercury. This experiment opens up interesting perspectives concerning the use of tuna byproducts in the development of alternative aquaculture feeds, when taking into account the selenium and mercury content of ingredients.
