Les pratiques anti-gaspillage des consommateurs et des distributeurs : comportements sociaux et communication, ville de Rennes

Abstract : This work examines the capacity of the food consumption practices of the city dwellers to reduce food waste, as well as the capacity of the food supply chains to adapt for or change these practices. In this regard, the sociological approach is used to establish a conceptual basis in order to study the eating behavior of consumers. The research theme presents a relevant topic in the context of the ecological transition which foresees changes in the behavior of individuals and at the household’s level. The methodological choice for this research is based on the development of a typology of consumers. This approach made it possible to identify the household practices that construct the eating behavior in relation to social and cultural dynamics. More precisely, the relationship between frugality, thrift, environmental awareness, organizational and culinary skills was examined in the survey analysis. This research examines as well the anti-waste solutions that exist in food supply chains based on the relevant feedback of consumers. This cross-analysis makes it possible to continue the discussion on the perspectives and possible strategies for the renewal of existing anti-waste practices in the distribution and in the daily routine of consumers on the one hand, and to ensure reciprocal communication on the implementation of these changes on the other hand.
