Évaluation du risque d’oxydation prématurée des vins blancs de Bourgogne par voltamétrie linéaire de balayage et impacts de différents itinéraires techniques

Abstract : Understanding the problem of premature oxidation of white wines and controlling their longevity is a major challenge for the Burgundian wine industry. The Bureau Interprofessionnel des Vins de Bourgogne has taken up this issue by launching a specific action plan involving both research and a network of 34 pilot cellars as experimental support in 2020. Polyphenols play a major and complex role in the oxidative stability of wine. In order to rapidly evaluate phenolic compounds and their evolution at different stages of the wine life, this study used linear scanning voltametry via the NomaSense PolyScanTM tool at two critical stages of the winemaking process: pressing and bottling. First, this study highlighted a diversity of practices on the Burgundian territory. At bottling, the study revealed a slight majority of wines sensitive to oxidation and initiated the construction of a wine library with the sampling of 17 different batches of bottles for monitoring over time. The polyphenol values in the final tanks at the end of pressing showed a real impact of SO2 management and pre-pressing operations (crushing, harvesting method). Finally, this study allowed to categorize the presses into 3 classes differentiated by their average polyphenol contents and their extraction and oxidation dynamics during pressing. The characterization of each class of presses makes it possible to predict, according to the pre-fermentation practices carried out, on which level of oxidative risk the wine matrix could be at the end of pressing.
