La restauration scolaire dans le premier degré : quelle place pour un approvisionnement bio de proximité ? Étude centrée sur six communes du Calvados

Abstract : Pupils in primary school get access to the town's food service. When authorities and associations are willing to develop organic and local food in schools, this essay asks six tows from western Calvados about their habits and choices of supplying. Small towns' experimentations allow us to understand how they adapt their resources to those new demands. Towns budgets being the main factor of decision, how do they make the choice between catering companies or public food service? Parents' role, territorial reform and new towns gatherings are as many factors questioned by the institutions of those six towns' food service. This work's central question is therefore to question the relevance of using public food services in order to develop organic agriculture, and then to evaluate the perception of organic food and local agriculture in those six towns.
