1812-1914 : un siècle d’histoire et d’utilisation du sucre de betterave

Abstract : While men have always looked for sweetness in nature, the vast majority of sugar consumed in France today comes from sugar beet, a plant whose virtues were hardly suspected two hundred years ago. This work looks at the birth of this young industry a little over two centuries ago and the origin of the discovery of beet sugar. We will study the events, whether political or scientific, which allowed beet sugar to prevail at a time when cane sugar reached with difficulty in France and where sugar cane was subject to both economic and ethicals barriers. We shall discuss the events that have resulted from this new sugar abundance. Finally, we will focus on the many uses of this sugar, particularly for pharmaceutical purposes at that time.
