Le marché de l’holothurie en France : état des lieux et pistes de développement

Abstract : Holofarm project has been initiated by breton shellfarmers. The issue is to developpe a new holothuricultural sector based on the control of reproduction and the breeding of native holothurians. Beyond the technical aspects of aquaculture, the economic dimension must also be considered in order to guarantee the sustainability of this new sector. The market study proposed here is based on two guidelines, developed around the following questions:How is the current holothurian sector structured in France? What strategy should be adopted to develop this market? Results come from combining tools included semi-structured interviews, exploratory interviews, literature monitoring, store checks, packaging studies and consumer surveys posted online. In the end, a mapping of the sector is proposed. The highlighting of its strengths and weaknesses helps to guide reflection on leads in order to develop this market. Finally, a commercial strategy is drawn up, taking into account the different dimensions of prices, products, place and promotion. Then, this study leads to this last reflection: is the French food outlet the best way to develop sea cucumber? What about the export or the pharmaco/cosmetological outlet?
